Coconut meat which has been shredded and then dried is called desiccated coconut. It is prepared by removing natural moisture in the coconut flesh. It has a snow white appearance with a fresh sweetness and nutty flavor.
Desiccated coconut is made by grating the white, mature coconut flesh finely, before drying out in hot air at about 55°c. It retains about 3% of the coconut’s moisture but is dry to the touch and taste.
It can be used in place of fresh coconut and has the same nutrients as fresh coconut. Desiccated coconut can give the same richness as fresh coconut or coconut milk. It is suitable to use in cakes, cookies, savories and other sweets.
